A few quick observations...
1) Notice Matt Ryan and Bruce Gradkowski in the top 10. I think both are average talents (sorry, Matty Ice fans), but they're both solid starts because they have great matchups.
2) Matt Schaub has a pedestrian projection this week because of his slow start, and more importantly, an underrated Oakland secondary. If he's your only QB, don't panic; he's extremely talented and will get you some points. But if you have Vick, Henne, or Ryan, bench Schaub, especially because Schaub will likely be without Andre Johnson.
3) The Green Bay RBs rank highly in these projections solely because the matchup is that sweet. If John Kuhn or Brandon Jackson cannot capitalize on the matchup in this game, it's time to cut bait. I'm rolling with BJax in a few leagues in a last ditch desperate attempt to show that he was worth the many Free Agent Budget dollars I spent on him, but if he can't produce against Detroit, I'll swallow my pride and move on.
4) Darren McFadden comes in as a top 10 RB option in spite of the difficult matchup against Houston's Run D, because DMC has just been that good. He's a legit high RB2, not just a matchup play. If you got him, you should probably stick with him.
5) Ray Rice and MJD are conspicuously low in the rankings for consensus #3 and #4 draft picks. They're both averaging less than 10 fantasy points per game. You have to stick with these 2 though. They're getting carries and are obviously extremely talented. If you have some combo of Foster, McCoy, Best, or Forte (which is perfectly conceivable given their ADPs), only then could I see you benching Rice in the tough matchup. Otherwise, stick with your first round draft picks.

Would you start bjax over shonn greene?
Good question. I would go with Greene. They both have looked bad, but have great matchups. I would imagine that Greene will get more carries than Jackson though.
Should I still start Shaub if I have Young on the bench??
I would start Schaub over Young. (It's now looking like there's a real chance Andre Johnson WILL play.)
for a flex play - rice, portis, best, or mark clayton?
I would start Best or Rice - probably Rice.
